ANZAC Biscuits

ANZAC biscuits (or cookies, for our North American friends) are sweet, crunchy biscuits that have become famous in New Zealand and also Australia.  They were once lovingly baked by mothers, wives and girlfriends of soldiers (from down-under) who were serving overseas during World War I then shipped to them.  Luckily they didn't spoil or get ruined during the long trip to the other side of the world!  The biscuits were also baked to sell as a fundraiser for the war effort.  These days the biscuits are made by commercial companies or baked at home. 

(ANZAC is an acronym for Australian and New Zealand Army Corps.)

Here we are trying ANZAC biscuits.  For most of us it was our first time to try them!  They were yummy!


Here is the recipe for ANZAC biscuits -

ANZAC Biscuits

Ingredients
100g butter
4 tbsp Golden Syrup
1/2 tsp baking soda
2 tbsp boiling water
1/2 c white flour
1/2 c white sugar
1 c desicated coconut
1 c rolled oats

Method
1  Combine the baking soda with boiling water.
2  Melt the butter and syrup in a pot.
3  Add the soda and water to the pot.
4  Mix the dry ingredients in a bowl. 
5  Pour liquids into the bowl of dry ingredients and stir.
6  Put spoonfuls of mixture on a greased tray.  (Space them out a lot as the mixture will spread when cooking.)  Press down gently.
7  Bake st 350 degrees F for 10-15 minutes.
8  Leave to cool on the tray.
9  Store in an airtight container.
